Apple Pie
Leach used 5 different kinds of apples. Tarts might include Greening and Granny Smith and sweets Golden Delicious and Jonathan. I always used Rome
Ingredients
6 cups peeled, sliced apples. A mixture of tart and sweet.
Pie crusts (e.g. Pillsbury)
Heat oven to 425 degrees.
Place pie crust sheet in a 9-inch pan.
In a large bowl, combine apples, white and brown sugars, cinnamon, flour and lemon juice.
Spoon over crust and dot with butter.
Place second crust over filling, flute edge.
Cut slits in several places.
Brush with cream and sprinkle with 1 tablespoon sugar.
Bake at 425 degrees for 40 to 45 minutes, covering edges of pie with foil for the first 20 minutes.
